
BIALYS
Beaked yeast roll, similar to the bagel, with additions, for example: crumbled bread, garlic or the poppy. "Bialystoker Kuchen" (this is different name of Bialys), is one of prewar Bialystok culinary specialities.
In prewar Bialystok, Bialys was sold straigh from the street. Name "bialys" propably came into existence in New York, where at the turn of the 19th and 20th centuries Jews tormenet by Russia and the omnipresent poverty settlers.
BUZA
White, fizzy drink with raisins, a little bit sour taste, made of the millet groats, popular in prewar Bialystok. Most often served with the halva ("buza at Makiedoniec").
Buza appered with settlers from Macedonia, witch first buzna, that is place where this exceptional drink was being sold, established in the Szapiro tenement on the Rynek Kościuszki Street (today horn Spółdzielcza Street and Rynek Kościuszki Street), next came into existence in the Sienkiewicza Street.
